🍋 Lemon Drizzle Loaf
A bright, zesty bake to cut through all that Winter richness.
- 1 cup caster sugar
- 125 g butter
- 2 eggs
- 1 1/2 cups self raising flour
- 1/2 cup milk
- 1 lemon zest and juice
Drizzle
- 1/4 cup lemon juice
- 1/4 cup icing sugar
Preheat oven to 170°C. Grease and line a loaf tin.
Cream butter and sugar until light. Add eggs one at a time.
Mix in flour, milk, lemon zest, and juice.
Bake for 35–40 minutes.
Mix drizzle ingredients together, until sugar dissolves
While still warm, pour over the lemon drizzle.
