🍋 Lemon Drizzle Loaf

A bright, zesty bake to cut through all that Winter richness.

Ingredients
  

  • 1 cup caster sugar
  • 125 g butter
  • 2 eggs
  • 1 1/2 cups self raising flour
  • 1/2 cup milk
  • 1 lemon zest and juice

Drizzle

  • 1/4 cup lemon juice
  • 1/4 cup icing sugar

Instructions
 

  • Preheat oven to 170°C. Grease and line a loaf tin.
  • Cream butter and sugar until light. Add eggs one at a time.
  • Mix in flour, milk, lemon zest, and juice.
  • Bake for 35–40 minutes.
  • Mix drizzle ingredients together, until sugar dissolves
  • While still warm, pour over the lemon drizzle.
