🧀 Roasted Cauliflower & Cheddar Soup

Ingredients
  

  • 1 small head cauliflower chopped into florets
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 3 cups vegetable stock
  • 1 cup milk
  • 1 cup cheddar cheese grated
  • salt & pepper to taste

Instructions
 

  • Toss cauliflower in olive oil and roast at 200°C for 25–30 minutes until golden.
  • In a pot, sauté onion and garlic. Add roasted cauliflower and stock.
  • Simmer for 10 minutes, then blend until smooth.
  • Stir in milk and cheese until melted and creamy.

Notes

Serving tip: Top with extra roasted cauliflower pieces or a drizzle of olive oil.
