🧀 Roasted Cauliflower & Cheddar Soup

Ingredients

small head cauliflower
chopped into florets

tbsp
olive oil
1
onion
chopped
2
cloves
garlic
minced
3
cups
vegetable stock
1
cup
milk
1
cup
cheddar cheese
grated
salt & pepper
to taste
Instructions
Toss cauliflower in olive oil and roast at 200°C for 25–30 minutes until golden.
In a pot, sauté onion and garlic. Add roasted cauliflower and stock.
Simmer for 10 minutes, then blend until smooth.
Stir in milk and cheese until melted and creamy.
Notes
Serving tip:
Top with extra roasted cauliflower pieces or a drizzle of olive oil.
