Friday Food–Banana cake & choc chip biscuits

Welcome to another Friday Food (yeah I know it’s Saturday). Didn’t do any baking today but I have two recipes to share with you I made earlier this week.

First up is Banana Cake. This is super easy and a great use of those super ripe, super brown (& I’ve found pretty cheap) bananas.

Banana Cake

  • 125 g butter, softened
  • 1/2 cup caster sugar
  • 2 eggs, lightly beaten
  • 2 bananas, mashed
  • 1 1/2 cups self raising flour
  • 1/2 tsp bicarb soda
  • pinch salt
  • 1/4 cup milk
  1. Preheat oven to180°C. Grease cake tin.

  2. Cream butter &sugar until light & fluffy, beat in eggs gradually.

  3. Stir in half sifted dry ingredients & banana.

  4. Mix to combine. Fold in remaining dry ingredients & milk. Spoon into cake tin.

  5. Bake for about 40minutes or until cooked. Cook cake for 5 minutes in tin before turning out.

Baking

(Have a food processor? Cream the butter & sugar first then add all the remaining ingredients. Makes it super quick.)

and the second is Choc chip cookies (or biscuits, whatever)

Choc Chip Biscuits

  • 90 g Butter
  • 1 cup brown sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 1/2 cup choc chips (milk, dark, white or a mix)
  • 1 1/2 cup self raising flour
  • 1/2 tsp bicarb soda
  1. Cream butter & sugar in a bowl.

  2. Mix in vanilla & egg. Beat egg into butter mixture.

  3. Stir in remaining ingredients.

  4. Place heaped teaspoonful onto greased oven trays.

  5. Bake at 180°C for 10 minutes.

  6. Allow to cool for 5 minutes on the tray then transfer to a wire rack to cool completely.

Biscuits
