A little catch up

Oops *blush* I kinda forgot to blog for a few days. Oh well – life happens hey 😉

Today I’m catching up with a few topics

1. My workspace.

Currently my laptop is set up on the dining room table. More room to spread out when I have paperwork everywhere. Plus side, I can use my laptop while I’m scrapping 😀

2. Role Models.

My mum. She has been thru so lots and is so strong.

3. Collaborate. hmm yeah well I missed this one

4. What’s in my bag?

Nappies, wipes, change of clothes for Miss A, lip gloss, deodorant, keys, wallet, some snacks from soccer yesterday.

5. Health living.

I’ll be back later today with a new recipe. It’s kinda healthy. Very yummy and a winter warmer. (ETA recipe is up here)

6. Wanderlust.

Where I’ve been – all the states in Australia except NT, New Zealand
Where I’d love to go – New Zealand again, Canada, Scotland, Stone Henge, Greece (namely Crete), Italy

Top tips

So I racked my brain trying to think of some tips I could share and I really couldn’t think of anything original so I put off blogging yesterday. Then I saw today’s prompt and I thought OMG beauty & fashion blogging :/

An early edition this week. This recipe went out to the subscribers to my YIAH newsletter earlier this month but I thought I’d share it here too.

You may have seen these stunning creations floating around the net in the last few weeks and let me tell you they are so super easy to make.

YIAH Apple Roses

All you need is

  1. Preheat oven to 180°C
  2. Get a microwave safe bowl and put some water and a squeeze of lemon juice in it.
  3. Cut the apples in half, remove the core and cut the apples in paper thin slices. Leave the peel on to give your roses colour. the colour of your apple skin will determine the colour of your rose. Place the sliced apples in the bowl with lemon and water.
  4. Soften your apple slices by microwaving for about 3 minutes.
  5. Roll out your puff pastry to make it a bit thinner. Cut into 6 strips.
  6. In another microwave safe bowl, put 3 tablespoons of apricot jam and 2 tablespoons water. Microwave for about a minute. Spread on your pastry.
  7. Drain the apples.
  8. Place your apple slices along one edge of the dough, with the skins hanging over the top. Sprinkle with a little Apple Pie Spice.
  9. Fold up the bottom part of the dough and roll your rose.
  10. Place in a silicone muffin cup.
  11. Repeat with remaining pastry and apple slices.
  12. Bake for about 40 minutes to allow pastry to cook. If the apple gets too brown, place on a lower shelf.
  13. To serve: dust with icing sugar (or some YIAH Rose sugar)

So what would I like for Mother’s Day….

I think I’m inspired by Leonie who decided to take herself off for a night at a hotel by herself, no hubby, no kids, just herself. That would be lovely. An entire evening to myself. A bubble bath. Room service. A good book. Some scrapbooking. A sleep in. Room service for breakfast. Late check out.

apart from that…..

stuff for my silhouette. more scrapping stuff. a trip to a day spa a massage. a new camera lens. all the chocolates.
